Ingredients
- 2 Large Cans Cubed Yams
- 1 Large Can Pineapple Rings In Juice
- 1 cup Dried Cranberries
- 2 Granny Smith Apples
- ¼ cup Dark Brown Sugar
- 1 tsp Allspice
- Pinch of Salt
- 1 tsp cinnamon
- 1 tsp Nutmeg
- ½ cup OJ Or Cranberry Juice Or Apple Juice
- 1 Stick Butter (Or Vegan Alternative Like Miyoko’s Vegan Butter)
- Mini Marshmallows
Steps
- Preheat Oven to 350 degrees
- In a saucepan, melt butter or (vegan butter), add brown sugar, spices, pineapple juice from can and other juice. Boil for 5 mins until it gets a little thicker. Meanwhile, slice apples into rings, leaving the skins on.
- Spray a deep casserole dish with non-stick spray. Layer the ingredients: ½ yams, ½ cranberries, ½ pineapple, ½ apples. Pour ½ of sauce over ingredients in the casserole. Repeat another layer.
- Cook covered with foil (or lid) at 350 degrees for about 30-40 minutes. Until bubbly. Cover top with marshmallows. Put back in the oven for a few minutes, until the marshmallows are slightly browned. Viola!
