The Mellon Family Breakfast Bake

Ingredients

  • 10 eggs
  • 16 oz cottage cheese
  • ½ cup flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup mayo
  • 1 4 oz can diced green chilis
  • 1 lb shredded Monterrey Jack cheese

 

Steps

  1. Preheat oven to 350 degrees.
  2. Beat eggs, cottage cheese, flour, baking powder, salt and mayo until fluffy.
  3. Mix in cheese and chilis.
  4. Pour into buttered 9×13 dish and refrigerate overnight (or at least 8 hours).
  5. Bake for 45 minutes to 1 hour until lightly golden and center bounces back to touch (don’t overbake).
