Ingredients
- 10 eggs
- 16 oz cottage cheese
- ½ cup flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup mayo
- 1 4 oz can diced green chilis
- 1 lb shredded Monterrey Jack cheese
Steps
- Preheat oven to 350 degrees.
- Beat eggs, cottage cheese, flour, baking powder, salt and mayo until fluffy.
- Mix in cheese and chilis.
- Pour into buttered 9×13 dish and refrigerate overnight (or at least 8 hours).
- Bake for 45 minutes to 1 hour until lightly golden and center bounces back to touch (don’t overbake).
