Classic French Gratin Dauphinois

Ingredients (serves 6 people as a side dish)

  • 3.5 lbs Potatoes
  • 2 Garlic Cloves, Minced
  • 10 ounce Crème Fraiche (Or Heavy Whipping Cream)
  • 7 tbsp Butter
  • 4 1/4 cup Milk
  • Nutmeg
  • Salt
  • Pepper

 

Steps

  1. Peel, clean and slice the potatoes crosswise into 1/4-inch slices (Nb: do not rinse the potatoes after slicing them)
  2. In a large saucepan over medium heat, bring the potatoes, milk, minced garlic, 1/4 tsp nutmeg, salt and pepper to a gentle simmer.
  3. Continue simmering the potatoes for 15 minutes, until they just start to turn tender. Taste and adjust the seasoning. Be very careful not to overcook them as they need to hold their shape for layering in the pan. 
  4. Preheat the oven to 355F and butter a large baking dish
  5. Drain the milk from the potatoes, carefully lift the potatoes into the dish and layer them without breaking them up too much
  6. Top the layered potatoes with crème fraiche salt, pepper, nutmeg and small knobs of butter.
  7. Bake in the oven for 50 minutes to one hour, until the potatoes are golden brown on top.
